But the real question is: What’s YOUR grilled cheese??

Grilled cheese.

It might be the most comforting culinary success on the planet.

A good grilled cheese sandwich is like a big hug. It’s like the feeling of being under your warm comforter when the air outside is super cold. It’s like opening a cold beer on a hot summer’s day. It’s like that time you walked into your house only to discover the only food you have is some old wheat bread and a block of cheddar cheese.

Oh wait, that’s every time.

BUT THEN LIFE BECOMES MAGIC.

Because suddenly, when you least expected it, when you weren’t even remotely thinking about grilled cheese (and usually you are), when you thought all dinner plans were ruined, you open that refrigerator door and rejoice at the happiness that is cheese and bread.

And suddenly, you can do anything.

I used to make grilled cheese in college quite a lot. I’ve since scaled back my grilled cheese intake, but only because I’ve started to cook a lot more real food.

But then today happened. Today I made this:

IMG_9259Yeah. That’s a grilled cheese sandwich. With ricotta cheese. HOLY SHIT.

Last week I made something with ricotta cheese in it. (I currently have no recollection of what it was, but I had to buy a big tub of ricotta cheese to make it.) And so, there I was, stuck with a barely-used tub of ricotta cheese and no plan.

First, I made a breakfast sandwich.

Then I was plan-less again.

So yesterday, after I realized I had no leftovers to eat for lunch today, I did some web-searching. And I found this.

So I made it.

And I had the most sensuous lunch experience ever. In my office. In front of people. It got awkward.

But you know what? I DON’T CARE. Because I got to eat that lovely little bit of sandwich heaven and you all just had to watch. HA.

Anyway. That got me thinking about grilled cheese and the fact that I really could/should/would eat more grilled cheese sandwiches if I started perfecting my style. What other cheeses can I try? What other breads? Other additions and extras? How about an inside-out grilled cheese? What would that even BE???

So, dear readers, tell me your cheese tales! What’s your favorite grilled cheese sandwich? Got any exciting extras? Favorite ways to eat it (tomato soup, etc)? Something totally new and exciting I’ve never heard before? TELL ME YOUR STORIES!

I’ll collect them all and try them out! And then I’ll do an epic grilled cheese post in the near future. If I don’t die of a heart attack first.

And if I do, this will have been worth it, I’m sure.

  1. Sounds delicious. For dinner on Wednesday I made a fresh pot of tomato basil soup and we had mozzarella, pesto (homemade of course), baby spinach, avacado grilled cheeses on sourdough. It was delicious!
